Chicken Croquettes - got a recipe?

Chicken / turkey croquettes aren't high on my list of favorites, but once or twice a year I feel like having them. Up until now, I've bought the ones that Weaver made and sent frozen to the grocery stores. Recently I've realized that none of the stores I shop in are selling them. I checked with Weaver and they confirmed that they have discontinued the line.

I made some tonight and everyone said they were good, but to my mind they were missing something.

Just wondering if anyone here has a good, proven recipe?
